“craft beer”とは何だろう 捨象から考える

“craft beer”もしくは”craft brewer”という言葉を定義したとします。そうすると、必ず生まれるのは”craft beerではないもの””もしくは”craft brewerではないもの”です。それは何なのか？ブルワーズアソシーエーション（以後、BA）の定義から考えてみたいと思います。

BAの2014年の改定まで使われていた古い定義はこうでした。

• Small: Annual production of 6 million bbls of beer or less. Beer production is attributed to a brewer according to the rules of alternating proprietorships. Flavored malt beverages are not considered beer for purposes of this definition.

• Independent: Less than 25 percent of the craft brewery is owned or controlled (or equivalent economic interest) by an alcoholic beverage industry member who is not themselves a craft brewer.

• Traditional: A brewer who has either an all malt flagship (the beer which represents the greatest volume among that brewers brands) or has at least 50 percent of its volume in either all malt beers or in beers which use adjuncts to enhance rather than lighten flavor.

smallの項では「年間生産量600万バレル以下」としています。こちらのリンクをご覧頂きたいのですが、BA発表のデータによると2014年にアメリカで消費されたビールの量は21,775,905バレルでした。こちらのデータでは各社のシェアが確認できますが、600万バレル以上なのは大手４社だけです。

次にindependentの項です。
「上記項目で既に定義から外れる会社に25%以上保有されていてはならない」ということなので、当然大手４社は除外。
そして、その傘下の会社も除外されます。（この点は”crafty問題”に繋がりますので、また改めて掘り下げてみたいと思います。）

最後のtraditionalの項は露骨です。
「全量モルト、もしくは風味を軽くする為ではなくより良くする為に副原料が使用され・・・」などとあります。これは明らかに米やとうもろこしのことを想定していて、いわゆる「ライトラガー」を狙い撃ちしたものでしょう。そして、そういうビールは大手４社のメイン商品です。

このように捨象から考えてみると、”craft beer”とされているものは意図的に大手を排したもの、つまり”非大手ビール全て”なのではないでしょうか。この定義は積極的に”craft beer”を定義しているのではなくて、むしろ”not craft beer”を定義しているように私には見えるのです。
